Puppachinos and Cranberry Lime Scones

Happy beautiful day to you!!  Thanks so much for checking back to see the newest blog post!!  My aunt got married recently and I can’t wait to post some of her gorgeous wedding pictures in my next blog post!!

My dogs LOVE puppachinos from Starbucks.  They know that when we load up to run errands, the trip will include a puppachino.  I tend to busy myself in the drive-thru line with continuously asking each of them if they want a puppachino.  I only do it because they lick their lips every time I say the word “puppachino” and I can’t stop laughing.  I have a video of it but I am unable to upload the video to the blog.  I will upload it to facebook and instagram.  If you want to laugh, check it out.

They always manage to get it on their noses, the side of the cups, and on the seat.  But they never waste any!!  HAHA!!  They quickly clean up their mess as soon as they finish their cup!  Next time you take your dog out, make sure you stop by Starbucks and ask for a puppachino when you order.  The puppachinos are free and your dog will be so excited!!

 

LOWES

Don’t leave your babies at home when you are running errands!!  I always call ahead before I take my dogs in a store for the first time.  These dogs loved shopping at Lowes!!  Lots of stores allow dogs!  I know my dogs love going to Lowes, Bass Pro Shop, and Barnes & Noble.  I have also been informed that Old Navy, Books A Million, and Kohls allow dogs but I have not, yet, taken my dogs to any of these stores so I cannot say for certain if this is accurate here in Longview.  So far, every store I have called told me that as long as the dogs are friendly, they are welcome in the store.  There are also several restaurants with outdoor seating that allow dogs but, again, I cannot confirm these places as I have not taken my dogs.  It is simply too hot to have them sitting on the concrete for an extended period of time.  As the weather cools off, I will be able to try some of the outdoor seating and I will keep you posted!!  These are the pics of Lowes shopping and after Lowes………..  Can’t stop smiling!

While these babies slept, I took the opportunity to make some Cranberry Almond and Lime Scones.  I tend to add all kinds of ingredients to my scones because they are so versatile.  I substitute the cranberries and limes for all types of ingredients such as blueberries, strawberries, blackberries, walnuts, and pecans.

 

Cranberry Lime Scones

Cranberry Almond Lime Scones

2  cups flour  (I use a mixture of all-purpose & whole wheat flour)

1/2 cup sugar + 2 Tbsp for sprinkling on scones

2  1/2 tsp baking powder

1/2 tsp salt

1/2 cup cold butter, cut into small pieces

1 large egg

1 tsp vanilla

1/2 cup heavy cream + 2 Tbsp for brushing on scones

2 Tbsp lime zest

1 cup fresh cranberries, cut in half

1/4 cup sliced almonds

~~~Instructions for scones:

Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt. Add the butter and use your hands, a mixer, or food processor, to combine until the mixture looks like gravel, or peas.

In another bowl, whisk together the egg, vanilla, 1/2 cup heavy cream, and lime zest.  Add to dry mix and stir with your hands, or a spatula, until combined.

Fold in the cranberries and almonds.  Do not over mix.  Dough will be moist.  Gather the dough into a ball and set on the parchment paper lined baking sheet.  Press into a disc that is approximately 8-9 inches.  Cut into 8 equal wedges and separate slightly.  Brush the tops with the 2 Tbsp heavy cream and sprinkle with 2 Tbsp sugar.

Bake for 20-23 minutes.  Top of scones will be lightly brown.  Allow to cool on the baking sheet for about 10-15 minutes and transfer to serving plate.  Drizzle with Lime Glaze (see below) and serve immediately.

Lime Glaze

Large lime, juiced

1/2 – 1 cup powdered sugar

Mix together until you achieve the desired consistency.  I start with 1/2 cup powdered sugar and the lime juice and add more powdered sugar, 1 Tbsp at a time, until I get the consistency that I prefer.
